It is known as forbidden rice as in ancients’ times it was only consumed by kings and others are forbidden from eating. Rich in antioxidants, Glycemic index is low, rich in Fibre and aids in Insulin Secretion.
Coconut milk porridge
Take 1 glass of Karuppu Kavuni rice. soak overnight. Grind it coarsely. In a pan, add little ghee and fry cumin seeds, pepper and cut Ginger. Add quarter cup of green gram dal and give fry till good Aroma comes from the dal. Now add coarsely ground karuppu Kavuni rice with 6 glasses of water. Add salt and pressure cook it till soft.
After the pressure settles down, open the lid and add 2 glasses of coconut milk. Mix well serve hot with pickle, or some chutney or thuvaiyal.
